Dark chocolate has been found to lower blood pressure because of "cocoa phenols" and provides valuable antioxidants that eliminate potentially carcinogenic free radicals in the system. However, milk may interfere with absorption of these anti-oxidants, which is why dark chocolate is more beneficial. Women may actually be craving chocolate's magnesium as well, since many are deficient in this element.
Sugar sparks the release of serotonin, and might lower amounts of another substance called NPY, resulting in a sense of well-being. The sweet taste also releases endorphins in the brain, giving a euphoric rush. The fat in chocolate satisfies another craving for "galanin," which curbs cravings for fat.
Much of the fat in chocolate is called stearic acid, which has no harmful effects on blood cholesterol like other saturated fats.
Theobromine and caffeine provide a mental boost and phenylethylamine (PEA) simulate feelings of love. Anandamine mimics the effects of marijuana in the brain, which completes stimulation of the "pleasure center."
Recent studies also found that sugar and fat shut off chronic stress on a biological level, providing yet another reason to indulge.
